Pumpkin Protein Pancakes

The red holiday cups may have sneaked their way into Starbucks already, but that doesn’t mean the pumpkin craze is over yet. These pumpkin protein pancakes are the perfect fall treat to not only satisfy your desire for a warm, delicious breakfast but also to provide a boost of protein to power you through your morning. Fitting for a post-workout meal or just to get you through your AM classes, these pancakes are sure to become a go-to breakfast.

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Servings: 1

Ingredients:
1 scoop vanilla protein powder
¼ cup puréed pumpkin
¼ cup egg whites (approximately 2 egg whites)
3 tablespoons oatmeal
1 packet sweetener (I use Stevia)
Cinnamon or pumpkin pie spice to taste

Directions:
1. Combine all ingredients in a mixing bowl, and stir together with a spoon or whisk until there are no lumps.

2. Heat a skillet coated with non-stick spray.
3. Pour batter into the skillet, cooking one pancake at a time until all of the batter is used up.

4. Top with maple syrup, nut butter or fruit.
